Dairy-Free Double Chocolate pudding (4-ingredients)

So one of the things my kid who has a milk allergy always sees is other kids eating ready-to-eat chocolate pudding in their lunch box. I always felt bad telling her she cant eat it or try it. So I was a mama on a mission when I reinvented this recipe. On google and youtube I saw few people making chocolate pudding with marshmallow and I wanted to try making it dairy-free. I had to change up some of the measurements, which could be due to the fact that I use oatmilk instead of regular milk. This recipe is Gluten-free, and dairy-free however it is not vegan as I used marshmallows with gelatin in it.

Tips to make a perfect pudding:
Since this chocolate pudding only requires few ingredients I would recommend using high quality Cacao powder or cocoa powder.
I used Enjoy Life semi-sweet chocolate chips you can also substitute it with dark chocolate chips of the same brand.
In the final step don’t skip the straining of the pudding into the ramekins as this process gives the silky smooth texture that you desire in a pudding.
Remember to take the pot off the heat before adding the chocolate chips as you don’t want the mixture to burn.

Ingredients
  

  • 1 cup Oatmilk Full-fat Oatly or Extra Creamy silk oatmilk
  • cup Marshmallow Allergy friendly kind
  • 2 tbsp Cacao Powder or Cocoa powder
  • ½ cup Semi-sweet chocolate Enjoy Life
  • tsp Vanilla optional

Instructions
 

  • In a sauce pan boil the Oatmilk and Marshmallow until the marshmallow completely melts and remove it off heat
  • Take 2 tbsp of the hot oatmilk in a small bowl and add 2 tbsp of cacao powder making a paste with no lumps.
  • Return the oatmilk back on the stove on medium to low heat and add the Cacao paste, and vanilla. Mix well until you see no lumps.
  • Turn of the heat, add the chocolate chips into the mixture and combine until all the chocolate is melted.
  • Strain the mixture into your desired ramekin and refrigerate up to 4 hours.
